Happy Lobster Truck
“Talk about a dream come true. I started this business and I started it with my best friends. There’s a lot of pride in building something together.
We all grew up in the suburbs and live in Chicago now. We knew we wanted to start this here because it’s our home and doing it for our community makes it that much better. People come up every day and you know them. You ask how they’re doing. You know their order. It’s like seeing friends every day. That’s been the best part of all this.
I wish the city knew that we’d love to be part of the solution. We know food trucks make Chicago a better food city, but we almost have nowhere to go. They’re issuing more and more licenses with only a few areas where we’re allowed to go. That causes a lot of problems.
Other cities are so welcoming to food trucks. Hopefully Chicago comes around.”
